The bloom of an egg protects it from bad bacteria. The eggs can be stored at room temperature for up to a month and then in the fridge for weeks after that without damaging the bloom.
Eggs should not be washed until you are ready to use or refrigerate them. When you wash your eggs, rinse them under cool water. Cooking and eating eggs that have not been washed can cause Salmonella infection. It is very important that you wash them before use.
